Behind the Scenes: A 200-Guest Wedding
From prep at 4am to the last plate served — here's what goes into catering a large wedding.
Behind the Scenes: A 200-Guest Wedding
When a couple trusts us to feed 200 of their closest friends and family, every detail matters. Here's a glimpse into what a typical large wedding day looks like at Roots.
4:00 AM — Prep Begins
Our kitchen team arrives before dawn. Jollof rice goes on first — it needs the most time to develop that deep, smoky flavour.
8:00 AM — Marination Station
Chicken wings, legs, and thighs are marinated in our signature spice blend. Suya skewers are threaded and seasoned.
12:00 PM — Cold Prep
Salads are assembled fresh. Sweet potato salads, dressed and ready. Akara batter is prepared for frying on-site.
3:00 PM — Loading Up
Everything is packed into insulated containers. We transport hot food hot and cold food cold — no compromises.
5:00 PM — Service Begins
Our team sets up at the venue. Hot dishes are finished and plated. The buffet opens.
