Why ripe plantain makes all the difference — and how we select the perfect bunch for your events.
Sourcing the Best Plantain
Golden fried plantain is one of our most-loved sides. But did you know the ripeness of the plantain completely changes the flavour?
Sweet vs Savoury
We source ripe plantain — the skins should be mostly black with golden spots. This is when the starches have converted to natural sugars, giving that caramelised sweetness when fried.
Our Sourcing Process
- We visit our suppliers weekly to hand-pick each bunch
- We check for the right ripeness — mostly black skin, firm flesh
- We let them ripen further in our kitchen until they're perfect
- We fry in small batches to keep them crisp and golden
Why It Matters
Underripe plantain tastes starchy and bland. Overripe plantain falls apart. The sweet spot is a 2-3 day window — and we watch it closely.
Every plate of our golden fried plantain starts with this careful selection process.
